In Situ Wines is committed to minimizing environmental impact to both community and environment. We practice sustainable farming and utilize environmentally-friendly technologies in wine production and waste treatment. Current sustainable practices include use of cover crops between rows, manure and compost, and biodegradable reeds to tie back pruned canes.
Our winery, offices, and related production facilities are located adjacent to our vineyards in San Esteban. The winery has a capacity of 2.5 million liters, and wine is stored in well-ventilated and well-equipped cellars. These cellars include our barrel cellar, where reserve wines are aged in French and American oak barrels from many of the world's most prestigious cooperages. Viña San Esteban also takes pride in utilizing the most up-to-date and technologically advanced systems for wine fermentation and stabilization. Our pressing and refrigeration equipment, for example, is the industry standard for gentle juice extraction and strict temperature control .
